"Brilliant sliced and flash-fried with dry-cured smoked back bacon, onions, and chipotle chillies, passed over with lime juice and stuffed into a bun or corn tortilla with raw red onion and chopped fresh coriander ā they are delicious.
Doubled up with cheese in the middle, then breaded and fried, they make for a crispy joy.
For those watching their health, a quick sear to rare or medium-rare, served with a lightly dressed crisp green salad, makes for a lean but tasty lunch.

"This had generous thickness for a minute steak, was beautifully juicy and had a good, un-pappy texture. The meat had a clean finish and the judges thought that this was a good example of a minute steak.
There were attractive caramelisation notes on this steak and a very decent aged note on the nose. Judges thought this was a very distinguished steak and loved the texture and the lasting flavour, coating the palate. Delicious.
This is appealing, glossy beef beautifully cooked with small amount of marbling. It has a good beefy aroma that follows through on the palate with good beefy flavour and is juicy. The appealing fat flavour is also present, which is unexpected for a minute steak. There is an attractive lasting flavour for such a small piece of steak."
